The song is "Vegas” by Doja Cat, which samples Presley’s recording of “Hound Dog”. I think it was a great contemporary take to a classic song.

A young Elvis hears a man singing a song in a tiny wooden building toward the start of the film, and there are people dancing inside. Elvis performs a mashup of his rendition of the song with the original version by the man in the building later in the film. Since I don't listen to Elvis, does anyone know what song it is?

I'm pretty sure that was Big Boy Crudup's "That's All Right Mama". It was Elvis Presley's debut single. The first time Colonel Tom hears Elvis's version is when Jimmie Rodgers plays the album for him prior to the Hayride.
